MANGO PANCAKES WITH HONEY-BUTTER

These pancakes are wonderful for a leisurely brunch as they taste great and can be made ahead of time and then toasted to serve. Pancakes are not only meant for breakfast; you could even try them out with one of your favourite stews for lunch (minus the honey-butter of course). Try them with chicken or mouton strew.

Ingredients

For the batter
. 100g butter, at room temperature
. 2 tablespoon honey

For the pancakes
. 140g self-raising flour
. a pinch of bicarbonate of soda
. 25g sugar
. a pinch of salt
. 1 egg
. 150ml milk
. flesh of one ripe mango, finely chopped
. vegetable oil

Method

STEP 1: Beat the butter with honey and spoon onto a large of piece of cling film. Squeeze it into a sausage shape, then wrap tightly and chill until ready to use.

STEP 2: Place the flour, bicorbanate  soda and bowl then stir in the sugar and make a well in the centre. Beat the egg and milk together then gradually pour into the well, stirring slowly to avoid creating lumps. Stir in the mango.

STEP 3: Heat a frying pan over low heat and add a little oil. Drop in the batter to make a pancake and let it cook until the surface is covered in bubbles and the underside browned. Flip the pancake and cook the other side. Repeat until all the butter is used up.

Serves 12
Serve warm or let to cool, then toast and apply the honey-butter as a spread.
