Vegetables – Stir fry

One way to make children indulge in vegetables is by spicing them. Kids often refuse to eat vegetables due to poor presentation and lack of creativity. One has to be artistic to be able to lure kids into enjoying veggies.

For instance, colour is very important to children; the brighter the vegetables, the better. Kids are attracted to an array of interesting colours; so ensure you incorporate a variety.

Vegetable stir fries are great for kids as they retain nutrients due to their fast preparation. They contain lots of fibre that keeps the little ones full for a longer period. The great thing is that kids can eat them with bare hands.

Kids enjoy the texture in vegetables like Broccoli and love to explore as they chew them. You can choose to add whip cream or yoghurt to the veggies as they munch on them.

Ingredients

  • 1 teaspoon sesame oil
  • 100g fresh mushrooms- sliced thinly
  • 2 tablespoons water
  • 100g Broccoli-Sliced thinly
  • 75g Snow peas trimmed-sliced thickly
  • 1 table spoon Tamari
  • 1 Green Onion-Sliced thinly

Method

  1. Heat oil, stir-fry mushroom and carrot for 2 minutes.
  2. Add the water, stir-fry for 5 minutes or until carrot softens.
  3. Add Broccoli and snow peas, stir-fry until Broccoli is just tender. Stir in Tamari.
  4. Serve stir-fry topped with onions
