Leek and potato soup
Ingredients
• 1 teaspoon olive oil,
• 1 clove garlic-crushed,
• ½ teaspoon fresh thyme leaves,
• 1 small leek-sliced thinly,
• 1 medium potato-chopped coarsely,
• 2 cups vegetable stock,
• ½ green onion-sliced thinly.
Preparation
1. Heat oil in a saucepan, cook garlic, thyme and leek, stirring, about three minutes or until leek softens.
2. Add potato and stock, bring to a boil.
3. Reduce heat, simmer, cover for about 15 minutes or until potato is tender.
4. Blend or process leek mixture until smooth.
5. Reheat soup, serve topped with onion.
