Butternut Squash

Incase you’re wondering what a butternut is, it is a type of a pumpkin that is shaped like a gourd and when fully grown, it shines forth a rich yellow color. The difference between a butternut and other pumpkins is that it is sweet and easy on the palate. Its soup is a delicacy you would relish and for kids, well, they can only keep asking for more. Furthermore, it is packed with nutrients so useful to the body, you can’t imagine a diet without them, and yes, you can use it as an appetizer too!

INGREDIENTS:

» 1 medium sized butternut.
» 1 finely chopped onion
» 1 bunch coriander leaves
» 20gm butter » salt
» l liter of water

PREPARATION:

» Briefly fry the onions and butter in a non-stick pan until brown.
» Wash and dice the butternut into small sizes and then add into pan.
» Wash the coriander leaves well under cold running water then chop finely and add into the pan.
» Add water and salt and cover with a lid and letting it simmer for 20minutes.
» When well cooked pour everything into a blender and blend to a pulp.
» Season if necessary and serve hot.
