Savoury pancakes
This tasty treat is easy to make, and perfect any time of day.
Ingredients
- 1/2 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/4 cup milk
- 1 cup grated carrots
- 1 cup grated zucchini
- Vegetable oil
Directions
- In a large mixing bowl, stir together the flour, baking powder and salt.
- In a separate bowl, whisk the egg and milk, then stir in the carrots and zucchini.
- Add the wet ingredients to the dry mixture and combine thoroughly.
- Place a large pan over medium heat and add 1 tablespoon of oil. When the oil is hot, spoon the butter into the pan, about 1/3 cup per pancake, and cook for 2 minutes on each side or until golden brown. Add more oil to the pan as needed.
- Remove the pancakes from the pan. Once they’re cool enough to touch, roll them up and serve.
- Serve the pancakes warm. Makes 5 rolls.
